The Claridges New Delhi is proud to announce the completion of 30 years of one of its oldest outposts, the iconic Dhaba in Delhi. Dhaba has been satiating its diners and patrons for three decades with its signature North Indian fare in a typical Dhaba-style eatery in the 5-star hotel.
Dhaba first opened its legendary doors in 1986 and today, after 30 years of excellence; its culinary perfection stands undisputed in India. The restaurant stands on a legacy guided by the rich traditions of North Indian roadside eateries and is inspired by the contemporary fine dining experience. With recipes that have stood the test of time, Dhaba is as famous for its unique highway dining experience as it is for its delectable cuisine; the Balti Meat and Dal Makhani date back to the first day since Dhaba started serving food. The true magic of Dhaba, however, lies in its heritage: the roadside atmosphere created by Rashmi Khanna and the rich menu left behind by its first head chef, Chef Tafsil.
Having garnered a loyal following over the years, it is known for its award-winning speciality dishes, authentic ambience and homely service. Dhaba’s reputation stems from its 30-year old heritage, combined with its commitment to serve a feast to all senses. The warm aroma from the kitchens and atmosphere is known to transcend one to India’s culinary roots.
The carefully designed, wholesome experience is a testament to Rashmi Khanna’s unparalleled zeal, the first owner of Dhaba. This passion translated to intricate detailing of this experience based on her visits to over two hundred roadside stalls. The kitchen worked only with patilas and barnis and the official uniform was that of traditional Punjabi attire, a lungi and kurta. The innocuous parking of a truck, pickle jars adorning the walls and a radio reminiscent of our past, all add to this contemporary expression of the highway theme.
Dhaba has since then undergone refurbishments but has retained its original charming and rustic feel, because there is more to a restaurant than outstanding quality food – its about the entire Dhaba experience at The Claridges. The menu continues to present award-winning signatures like the Kanastree Baingan, Balti Meat, and Tiffin Chicken. The iconic Dhaba at The Claridges stepped out of the hotel premises as Dhaba By Claridges in Delhi in 2015, presenting the quintessential Dhaba experience now in a lighter, more fun ambiance.
The legacy continues as its one of the most celebrated restaurants serving North Indian cuisine.

Mr. Ali’s career began with the Thapar Group in 1980, he worked his way through Eicher International Ltd., Ashok Leyland Ltd., and finally, as President External Affairs to the global conglomerate – Punj Lloyd Group reporting directly to the chairman, Mr. Atul Punj. An asset to The Claridges Group, Mr. Ali will leverage and enhance the ongoing and future work of the company.
A stalwart of the industry, Mr. Ali has experience in strategic government relations, public affairs, business development, exports, international collaborations and green field projects. He has also successfully set up several export based manufacturing facilities for large Indian corporate houses. Instrumental in the development of industrial, residential and commercial projects over the length and breadth of India, he comes well versed in the current landscape of India’s infrastructure sector. His air of calm decisiveness and immaculate record make him the perfect fit for leading the Group in its future projects.

The new space, headed by Amit Kumar Jain, AVP Client Relations, was inaugurated with an exhibition showcasing 31 recent black and white works by Krishen Khanna. One of India’s leading modernists, Khanna’s works draw from the literature of the Mahabharata and the Bible, as well as his own memories of the Partition. Comprising both monumental conté on canvas works as well as paperworks, the paintings are a “display of astounding energy, even grandeur,” according to critic Gayatri Sinha. The exhibition continues through 13 November 2016.

Sevilla at The Claridges, in keeping with their long-standing reputation of bringing the best to the table, has collaborated with wineries from across France to introduce four organic wines to their menu. Sourced from small family-owned estates with established ties to the hotel, these wines have been sustainably produced, mindfully handpicked and are exclusively available at Sevilla.
The wines are from regions across France where winemaking is a way of life and an outcome of deep passion handed down from generation to generation. The Loire Valley has a long history of winemaking dating back to the 1st century - archaeological evidence suggests that the Romans planted the first vineyards in the Loire Valley. Loire wines tend to exhibit characteristic fruitiness with fresh, crisp flavours, especially in their youth. Languedoc is a significant producer of wine - it produces more than a third of the grapes in France. The wine growers here are not afraid to experiment and innovate.
France is rife with eco-friendly wineries and the list is getting longer with each passing day as more vintners are becoming sensitised to the impact of their practices on the environment as well as on the quality of their wines. The induction of these five wines into the menu is a nod to the fact that The Claridges acknowledges the integrity of organic produce. Other than the commonly-known health benefits of consuming wine, the added bonus of substituting organic wine for regular ones is that you are able to protect yourself from harmful chemicals. Additionally, the advantages of organic wine comprise environmental ones. Since no harmful chemicals are used in the production of organic wines, the air, water and soil aren’t affected adversely.
Speaking on the association, Winemaker Xavier Ledogar says, "Our wines are meant to be shared - they are for friends and long winded conversations. We hope you take as much joy in drinking them as we do in making them." Xavier Ledogar, Languedoc
The breathtaking landscape of the Languedoc, France’s most southern winemaking appellation is home to amazing diversity of indigenous varietals and terroirs. La Mariole is produced from Carignan vines that are over a century old. The result is elegant and precise with a character that unfolds gradually. Made with the fruit from centennial vines, this wine shows the finesse of an oldvine Carignan. Complexity, discretion, mystery are whispered through spice and smoke.

Domaine des Pothiers, Côte Roannaise
Romain Paire’s family has been in the winemaking business for a long time. On their estate nestled in the lesser-known appellation bordering Beaujolais and Rhône, Gamay is king. The granitic soils allow for a warmer, stronger expression of the varietal that holds up well to the heartiest of dishes. The undertones are fresh with red fruit and the soft tannins lend to the silky smooth texture.

‘Haute Côt(e) de Fruit’
Fabien Jouves, Cahors
A pure Malbec that shimmers with bright fruit, the name is a pun on the Burgundy appellation system. Fabien Jouves is one of the first winemakers to start identifying distinct parcels on Cahors’ incredible patchwork of terroirs. This wine is an explosion of black fruits, cinnamon and incense.
Winemaker Fabien Jouves believes that through this association, Indian consumers will get a chance to appreciate authentic Malbec, created in its birthplace, and experience its versatility.

‘Je t’aime Mais j’ai Soif’
Vincent Caillé, Muscadet
This largest of sub-appellations of the Loire Valley, Muscadet, is home to the varietal Melon de Bourgogne. The name of the wine translates to “I love you, but I’m thirsty” and this is a thirstquencher if ever there was one. Mineral, crystalline, with floral notes galore, it is best paired with seafood dishes and good friends. With the partnership with Sevilla, Vincent Caillé wants to bring affordable organic wines to New Delhi and give the guests an opportunity to learn about clean organic wines.

New Delhi, 1 July 2015: The Claridges, New Delhi is proud to announce their first ever participation in the annual General meeting organised by the Concierge Association of India between 3rd - 5th July in Kolkata and 9th Asian Congress of UICH Les Clefs d’Or in Tokyo, Japan from 24th - 27th August 2015.
Nitin Srivastava, Chief Concierge at The Claridges will be representing the hotel at both conferences. Mr. Srivastava, a veteran hotelier with over eight of extensive experience in the hospitality industry is the holder of the Golden Keys from Les’ Clef’s D’or. He also has experience in areas of providing consistent high standard and personalised services. Nitin was one the youngest Chief concierge in the country and also is one of the youngest concierge members to be accredited with golden keys at the age of twenty eight. Nitin has been instrumental in generating incremental revenues for the hotel in the last one year significantly surpassing previous year sales.
U.I.C.H India chapter has 71 golden key members and based on the Nitin’s contributions and engagement with the association he is one of the chosen few.

New Delhi; 03 June 2015: In observance of World Environment Day 2015, the biggest and most widely celebrated global day for positive environmental action, The Claridges, New Delhi will take multiple steps to make a difference in their own way.
On June 5th, in a partnership with Mahindra & Mahindra, The Claridges will offer India’s first automatic electric car, with solar charging and zero emissions, the Mahindra e2o to all guests for travelling within the city to promote eco-friendly travels. The team will also urge guests to use bicycles available at the hotel instead of cars to cover short distances.
The Claridges is also organizing a ‘Green Walk’ - a tree plantation drive in the area with their staff and guests. As a part of the initiative, the hotel will host a special screening of Davis Guggenheim’s The Inconvenient Truth to explain the dangers of global warming. A short video will also be screened on how to conserve natural resources and energy.
Planters will be handed over to all the guests at the time of checkout as a memorabilia and to advocate for the betterment of the environment. The hotel will also encourage electronic billing to save paper. To increase awareness of and dedication towards the cause, the hotel’s staff will also conduct a session for all taxi drivers around the hotel on fuel conservation and vehicle maintenance.
Keeping in mind the current state of the depreciating fuel reserves, Sevilla will be candle lit for the evening with an endeavor to promote conservation of resources. Adopting a no-wastage policy, the hotel will have no bins at the hotel’s café. With a special menu of greens and sustainable ingredients, The Claridges will strengthen their support to World Environment Day.
